Chapati Ladoo


Recipe Source:My mother
Serves:10 ladoos
Ingredients Required
  • Left over chapatis/freshly made chapatis 5 or 6
  • Ghee 2 tbsps
  • Sugar 2tbsps or to taste
  • Cardamom powder 1/2 tsp

Preparation

  • Using your fingers make chapatis to small pieces.
  • Take a blender add chapati pieces,sugar,ghee,cardamom powder.
  • Blend them together so that they are coursely ground.
  • You will get powdered texture.
  • Make balls out of it.

Note:These can be stored for upto a week.

Hot Chocolate

Ingredients Required
  • Milk 1 cup
  • Hersheys cocoa powder 1 1/2 teaspoons
  • Vanilla extract/essence 1/8th teaspoon
  • Sugar to taste
  • Cinnamon stick (optional) 1" stick
  • Whipping cream for topping
Preparation
  • Boil the milk.Take together sugar,cocoa powder,vanilla essence and a table spoon of milk.
  • Make a smooth paste out of it.Add this paste to the remaning milk along with cinnamon stick.Boil for 2-3 minutes.
  • Pour into a mug and top with whipping cream.

Chicken Curry -1

Ingredients Required

  • Chicken thighs (skinless) 1 lb
  • Onions large 1
  • Green chillies medium 5
  • Tomatoes medium 2
  • Coconut powder 1/2 teaspoon
  • Poppy seeds 1/2 tea spoon
  • Ginger&Garlic paste 1 table spoon
  • Turmeric 1/8th of a teaspoon
  • Dhania powder 1/2 teaspoon(optional)
  • Yogurt/curds 1 tea spoon
  • MTR Chicken curry masala 1/2 table spoon (optional)
  • Chilli Powder to taste
  • salt to taste
  • Home made garam masala 1/2 teaspoon
  • Cilantro chopped 1 teaspoon
Preparation
  • Cut the Chicken into cubes and wash thorougly with salt and turmeric.
  • To the washed chicken add chilli powder,little salt,yogurt,dhania powder and put it aside.
  • Heat oil in a wide pan and add chopped chillies,onions ,tumeric and a pinch of salt.
  • Let onion turn light brown in color.Now add finely chopped tomatoes and cook till they are done.To this add coconut powder,poppy seeds,ginger garlic paste and fry until the ginger&garlic paste loses the raw smell .
  • Add MTR chicken masala and fry for 2 minutes.
  • Add chicken to this mixture and cover with lid so that all the juices in the chicken oozes out
  • Remove the lid and let all the juices evaporate.
  • Now check for salt and spice.Pour water and cook till u get the required consistency.
  • Those who want more gravy can add1 1/2 cups of water and cook.
  • Now add home made garam masala (this really gives a lot of flavour to the curry) and cilantro.Cover for 2 minutes and your done.Serve with rice or chapati.

OnionPakoda




Ingredients Required

  • Medium sized onions 2
  • Besan 1 cup
  • Rice flour 1/4 cup
  • Green chillies chopped 1 table spoon
  • Curry leaves chopped 1/2 tablespoon
  • Cilantro chopped 1/2 table spoon
  • Baking soda/powder 1/8th spoon
  • Salt to taste
  • Oil for frying

Preparation

  • Slice the onion and add salt to it leave for 2 minutes so that water comes out of onions.
  • To the flours add baking powder,chillies,curry leaves,cilantro.
  • Mix all the ingredients well.Don't make the batter runny.It should be thick.
  • Heat oil in a pan.
  • Using your fingers drop small amounts of batter in oil.
  • Fry till golden brown and put the over a paper towel so that excess oil is absorbed.
  • Serve hot with chutney,tea or coffee.

Bottle Gaurd Halwa

Bottle gaurd is very popular in india.koftas,sweets,appetizers and many other dishes can be prepared by using this bottle gaurd.It is usually called lauki,sorakay......This is a summer cooler.Those suffering with body heat during summer can have this frequently.It contains lot of water which helps in reducing body heat.




Ingredients required

  • grated bottle gaurd 1 1/2 cups
  • Sugar 1 1/2 cups
  • water 1/4 cup
  • Khoya grated 1/2 cup
  • Ghee 1 teaspoon
  • Cashew nuts 5
  • Cardamom powder 1/8th teaspoon

Preparation

  • Prepare the sugar syrup with water and sugar.Boil until the water achives one string consistency.
  • Meanwhile, in a wide pan add a teaspoon of ghee and fry the bottle gaurd till the water gets evaporated on low flame.
  • Now add this to the sugar syrup.
  • Keep stirring it continously.When it starts leaving the pan add khoya ,cardamom powder and immedietly remove it from the stove.
  • Mix well and decorate it with cashews fried in ghee.
Note

Peel the bottle gaurd and grated it.Make sure u don't burn bottle gaurd while frying.Khoya might melt if u cook for a long time.

Introducing me and my kitchen

Hello , I moved to a new place from mykitchenhobbies and thinking to restart my work.My blog "place for authentic indian kitchen" is one that explains you step-by-step procedures ,how to cook and use all the indian spices.I'm basically from Vijayawada, Andhra Pradesh.I love andhra food a lot .When it comes to Andhra food avakay+mudda pappu is something that stikes in your mind.Yes,i just love them.I'll keep posting some authentic dishes like chutneys,daals,curries, sweets and snacks and so on.And some posts might be related to gardening and cakes.Cake decoration is my favorite hobby that i do icing/frosting right from scratch using whipping cream,sugar,essence and an edible color.When it comes to gardening i use seeds from my pantry like chillies,fennel,fenu greek,tamrind list goes on......yes you can sow them and have fun while the plants are growing........are'nt you thrilled watching the plant grow?????????????
